6 leaves of peppermint
7 cl apple juice
1 cl sugar syrup
1 passion fruit
ELABORATION AND PRESENTATION:
Pestle the peppermint leaves and the pulp of half a passion fruit in a highball glass. Add the rest of the ingredients, complete it with crushed ice and stir lightly with a spoon.
Decorate with green apple carpaccio and passion fruit seeds.
